Wheat-free cookies and rain

I am so excited about this mix that can be substituted for wheat flour in recipes. I found it on the organizing junkie blog (http://orgjunkie.com) from April 5, 2012. I tried it with the chocolate chip cookie recipe from the bag of chocolate chips, and they were delicious--we couldn't tell that there was no wheat flour in them. 
If you  have a sensitivity to wheat, you might want to try this substitute.  The various ingredients are pricier than regular flour, but as a once-in-a-while treat, it will be great.
Brownies are one of my favorite baked goods, so that will be the next thing I'll try with this mix.  I'll let you know how they turn out.

On another note, we have had approximately 10 inches of rain in the past week, so things are really saturated.  The buffalo aren't venturing too far into the pasture where the creek is because it has definitely overflowed its banks.

  1. If you're interested in going wheat-free, or even grain-free, here is a link to a grain-free brownie recipe. You would never tell that it's made with black beans! You just put all of the ingredients into the blender...so easy and delicious. I use honey to sweeten it. Hope you'll try it, this is our favourite!

    1. I have tried both wheat-free and grain-free, but now I'm actually back eating wheat because I just bought a grain mill attachment for my KitchenAid stand mixer. I'm not gluten sensitive, but tried doing without grains to improve my health. Now I'm hoping that making baked goods with freshly ground wheat will not only be an improvement over store-bought bread but also help towards healthier living.
